Ice Cream Cupcakes

Ingredients

  • 1 (18.25 ounce) package chocolate cake mix
  • 1 1/4 cups water
  • 1/3 cup vegetable oil
  • 3 eggs
  • 1 (1.5 quart) container vanilla ice cream, softened
  • 1 (16 ounce) container prepared chocolate fudge frosting

Directions

  1. Preheat an oven to 350 degrees F (175 degrees C). Grease or line 24 cupcake or muffin cups with paper baking liners.
  2. Stir cake mix, water, oil and eggs in large bowl until moistened. Beat with a mixer on medium speed for 2 minutes or whisk by hand for 2 minutes. Drop 2 tablespoons of batter into each cupcake cup. Bake in the preheated oven until a toothpick inserted into the cake comes clean, about 8 to 10 minutes. When the cupcakes have cooled completely, cover and freeze until hard, about 4 hours.
  3. Spoon about 1/2 cup of the softened ice cream into each cup and gently pack it into the cup. Cover and return to the freezer until frozen, about 4 hours. Frost the cupcakes with the prepared frosting and serve.

Corned Beef and Cabbage I

Ingredients

  • 3 pounds corned beef brisket with spice packet
  • 10 small red potatoes
  • 5 carrots, peeled and cut into 3-inch pieces
  • 1 large head cabbage, cut into small wedges

Directions

  1. Place corned beef in large pot or Dutch oven and cover with water. Add the spice packet that came with the corned beef. Cover pot and bring to a boil, then reduce to a simmer. Simmer approximately 50 minutes per pound or until tender.
  2. Add whole potatoes and carrots, and cook until the vegetables are almost tender. Add cabbage and cook for 15 more minutes. Remove meat and let rest 15 minutes.
  3. Place vegetables in a bowl and cover. Add as much broth (cooking liquid reserved in the Dutch oven or large pot) as you want. Slice meat across the grain.

Sunshine Ice Cream Pie

Ingredients

  • 1 pint vanilla ice cream, softened
  • 1 (9 inch) graham cracker crust
  • 1 pint orange sherbet, softened
  • 2 cups whipped topping
  • 1 (11 ounce) can mandarin oranges
  • 2 tablespoons coconut, toasted

Directions

  1. Spread ice cream into crust; spread sherbet over ice cream. Freeze for at least 3 hours. Top with whipped topping. Cover and freeze. At least 30 minutes before serving, remove pie from freezer; arrange oranges on top and sprinkle with coconut.

Lemon Ice Cream

Ingredients

  • 1 (3 ounce) package cream cheese, softened
  • 3 cups sugar
  • 1 (3 ounce) package lemon gelatin
  • 2 cups half-and-half cream
  • 2/3 cup lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon lemon extract
  • 1 cup whipping cream, whipped
  • 8 cups milk
  • yellow food coloring

Directions

  1. In a mixing bowl, combine the cream cheese, sugar and gelatin; mix well. Add half-and-half, lemon juice and extracts; beat until smooth. Fold in the whipped cream. Stir in enough milk to measure 1 gallon. Add food coloring if desired.
  2. Freeze in batches according to manufacturer's directions. Refrigerate extra mixture until it can be frozen. Allow to ripe in ice cream freezer or firm up in refrigerate freezer for 2-4 hours before serving. Remove from the freezer 10 minutes before serving.

Raspberry Ice Cream

Ingredients

  • 2 cups fresh or frozen raspberries
  • 2 cups whipping cream
  • 1 cup half-and-half cream
  • 1 cup sugar
  • 2 teaspoons vanilla extract

Directions

  1. Place the raspberries in a blender; cover and process on medium-high speed until chopped. Combine all ingredients in the cylinder of an ice cream freezer. Stir in sugar is dissolved. Freeze according to manufacturer's directions.

Caramel Macchiato Ice Cream

Ingredients

  • 1 cup milk
  • 2 tablespoons instant coffee granules
  • 1 cup white sugar
  • 1 pinch salt
  • 2 cups heavy cream
  • 3/4 cup caramel dessert sauce

Directions

  1. Whisk together milk, instant coffee granules, sugar, and salt in a large bowl until sugar is dissolved. Stir in the heavy cream, then cover and refrigerate until chilled, at least 2 hours.
  2. Pour the chilled mixture into an ice cream maker and freeze according to manufacturer's directions until it reaches "soft-serve" consistency. Transfer half of the ice cream to a one- or two-quart lidded plastic container. Pour half of the caramel sauce over the top, then repeat the layers with the remaining ice cream and caramel. Swirl the caramel into the ice cream using a chopstick or knife. Cover surface with plastic wrap and seal. For best results, ice cream should ripen in the freezer for at least 2 hours or overnight.

Cream Cheese Frosting II

Ingredients

  • 2 (8 ounce) packages cream cheese, softened
  • 1/2 cup butter, softened
  • 2 cups sifted confectioners' sugar
  • 1 teaspoon vanilla extract

Directions

  1. In a medium bowl, cream together the cream cheese and butter until creamy. Mix in the vanilla, then gradually stir in the confectioners' sugar. Store in the refrigerator after use.
